Grilled Cheesy Ranch Chicken with Bacon

This recipe is a favorite “one pan” meal to grill. New potatoes, chicken breast, red onion, ranch seasoning, cheese and bacon, all in one foil pan. Perfect “no hands on” meal for your grilling season.

I have included a recipe for homemade ranch seasoning from the cookbook “Ranch: An Ode to America’s Beloved Sauce in 60 Mouth-Watering Recipes” by Abby Reisner. There are many recipes but this one has mustard powder, sumac and no dried onions!

Of course this recipe can be adapted to cooking in your oven!

Grilled Cheesy Ranch Chicken with Bacon

  • boneless, skinless chicken breasts
  • small new potatoes, cut in half
  • red onion, sliced
  • sweet peppers, sliced (optional)
  • EVOO
  • ranch seasoning (use packaged mix or see the recipe below)
  • bacon, cooked crisply and torn into pieces
  • shredded cheese of your choice (I used sharp cheddar – pepper jack would be good)
  • garlic powder (I like to add more than what is in the ranch seasoning)

Preheat your grill and cook the bacon; tear into pieces. Grill at medium temperature.

Combine the cut potatoes and onions with some ranch seasoning and EVOO in a bowl. Spray the foil pan(s) with non-stick spray and layer the potato mixture on the bottom of a foil pan. Place the chicken breast(s) on top, sprinkle with garlic powder and more ranch seasoning, then some bacon and cheese. Cover with foil and grill until the chicken reaches a temperature of 165 degrees. Depending on the size of the chicken and how hot your grill is, allow 20-30 minutes.

Homemade Ranch Seasoning:

  • 6 tbsp. buttermilk powder
  • 1-1/2 tbsp. dried chives
  • 1 tbsp. dried parsley
  • 1 tbsp. dried dill
  • 2 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1 tbsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. mustard powder
  • 2 tsp. sumac (optional – I added See Note 1)

Combine all the ingredients in a bowl, transfer to a “coffee” grinder. Grind the mixture until the parsley and chives are ground fine.  Store in an airtight jar in the refrigerator for up to 2 months.

Makes about 1 cup

Note 1: Sumac has a fruity, tart flavor which is not quite as overpowering as lemon. Try using sumac instead of fresh lemon in a recipe.

  1. This looks great! I made my own ranch from a recipe once, and I didn’t like the dill. So then I got some from nuts.com but haven’t tried it yet. Can’t wait to try this!

    • Thanks Mimi – I looked at a number of recipes (this one has dill) and liked this version probably because of the sumac addition. Obviously, this is a seasoning made to one’s tastes 🙂
