Are you looking for something new and different for breakfast? I have a good suggestion with this delicious, somewhat healthy, recipe.
This terrific idea came to me through an email from Food.com. I immediately knew I wanted to make this because of three favorite ingredients that I never tire of eating; avocado, bacon and Michigan maple syrup. The bread is secondary as it is just a vessel to hold all of these goodies.
Avocado, Bacon and Maple Syrup on Toast, Adapted
- baguette of your choice – I used a crusty multigrain or try Overnight Crusty Baguette for homemade
- 3 ripe avocados
- 2 tbsp. freshly squeezed lemon juice
- other seasonings as desired
- bacon crisply fried, drained and broken in half (it’s best not to use a thick bacon such as applewood)
- real maple syrup to drizzle
Cut the baguette into 1/2 to 1-inch thick slices and toast. I like to use my Breville toaster oven as I don’t have to preheat and it’s a lot quicker to toast the bread than in my oven.
Fry the bacon until it is crisp and drain it on paper towels; tear in half. You could also crumble up the bacon but the presentation will not be as pretty.
Mash up the avocados, add the lemon juice and season to taste. I did not add any seasonings as the combination of fresh avocados, bacon and syrup was so flavorful nothing else was needed.
Divide the avocado mixture evenly among the bread slices and top with the bacon. Drizzle a little maple syrup on top and serve.

Hi Lina – I would absolutely love to (especially pizza) but unfortunately I am having trouble with my computer overheating. I have been a co-host for Angie (FF) a number of times and I recently had to cancel for April 22nd because of this problem. When I get on her site my computer locks up and always starts to overheat so I can’t comment on the posts unless I get emails like I do from you or I have the names of the blogs. I may have the problem solved by then but I would hate to leave you “in limbo”. This does happen on other blogs too… Thanks for asking as I am sure it would be a lot of fun judging all of the different pizzas, a favorite comfort food 🙂

Oh is it? How old is your computer? Blogging on tablets is actually better and much more handy.
I bought it new in Oct. 2010, Toshiba laptop with Windows 7. Just had it in the shop for 1 week and they cleaned it up, bought a hard drive and now this problem. It has been doing it a little but now it’s hard to manage. I have a lot of pictures and of course my blog has almost 900 posts so who knows???
The blog wouldn’t be a problem…you can open wordpress.com and sign in anywhere..it is all backed up…the media used in your posts is also backed up…so you really don’t need to worry. And you can always transfer data from one to another so don’t need to worry about that also…even if it crashes we can revive the data
Thanks – that’s good to know. I just don’t like limitations like this. I have been doing some research and apparently overheating is a problem. The solution???
Sometimes this heating may happen because of accumulation of dust in the cooling unit…so you should give to the supplier or a technician for service..They will clean and sometimes may replace the grease fr you…this may be one of the reasons

I always buy too many avocados and then after using just one or two for guacamole don’t know what to do with the rest. I’ve never thought of using them like this on toasts. Great idea!

This has become my favorite way to make avocado toast. I mean with the addition of bacon and maple syrup – yummy.
