Grilled Carrots with Lemon and Thyme

I just love these baby carrots which are perfect for grilling in just 10-15 minutes. I found some seeds  from the Chas. C. Hart Seed Co. in Connecticut. Only 3-1/2 to 4-inches long and 3/4-inch around. Maybe a fall crop… In the meantime I will buy these sweet little veggies.

Grilled Carrots with Lemon and Thyme

  • baby carrots, trimmed
  • equal parts oil and fresh lemon juice
  • thyme leaves
  • salt and pepper to taste

Preheat your grill  and brush the grates lightly with oil. I also like to oil the carrots before grilling them. Grill for about 10 minutes until lightly charred and fork tender, rotating halfway through.

Toss the carrots with lemon juice, thyme, salt and pepper to taste.

  1. We planted some carrots in the garden too Judi, but not exactly sure of the variety. I love the ones you’ve grilled, and I like that you can actually grill carrots, I’ve never really done that, so it’s a “have-to” on my list of others.
