Lavender-Infused Mom Collins

HAPPY MOTHER’S DAY!  This refreshing drink appeared in an email from Joy the Baker.  I loved the idea of using lavender as every year I harvest the flowers, dry them and save for future recipes such as this. This is a great spring/summer drink for those who enjoy lavender as much as I do.

Lavender-Infused Mom Collins, Adapted

Lavender Sugar Rim:

  • 1/2 cup sugar
  • 3 tbsp. lavender sanding sugar (this adds some nice color)
  • 2 tbsp. lavender flowers, dried
  • 1/2 of a vanilla bean pod, scrape out those yummy seeds
  • juice of a lemon

Combine the first four ingredients and mix well.  The fragrance is so overwhelming!  When ready to serve rub each glass rim with a little lemon juice and dip the glass into the sugar/lavender mix.

Lavender-Infused Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 2 tbsp. lavender flowers, dried

Combine the sugar and water in a small saucepan; heat and stir until the sugar dissolves.  Add the lavender and let steep for 10 minutes; then drain the lavender.

Mom Collins Per Drink:

  • lots of ice cubes – I used lemon zests, raspberries and some of my tiny pansies to make some pretty ice cubes
  • 2 oz. gin – too strong for me, I would only use 1 oz. or leave it out
  • 1-1/2 oz. lavender-infused simple syrup
  • 1-1/2 oz. fresh lemon juice
  • sparkling water or club soda
  • lemon slices for garnish

To Serve:

Rub each glass rim with lemon juice and dip in the lavender sugar.  Add a couple of ice cubes, gin, lemon juice and lavender simple syrup and stir.  Add more ice cubes and top with the sparkling water.  Garnish with a lemon slice and enjoy 🙂

  1. These are gorgeous! I love the little additions like the lavender sanding sugar and the pretty ice cubes; it really gives it a personalized touch. You’re also so lucky to be able to grow your own lavender. That’s nearly impossible here in Brooklyn haha 😀

  2. I have lavender in the garden, it’s not doing too well. I give it too much water. Might be easier for me to just buy so I can actually try it in a refreshing and pretty drink such as this. Happy belated Mother’s Day!

    • Thanks Angie – lavender is one herb that does not like “wet feet”. We have had a ton of rain and a couple of my plants are struggling. I have quite a few plants so hopefully most of them will be okay 🙂
