HAPPY MOTHER’S DAY! This refreshing drink appeared in an email from Joy the Baker. I loved the idea of using lavender as every year I harvest the flowers, dry them and save for future recipes such as this. This is a great spring/summer drink for those who enjoy lavender as much as I do.
Lavender-Infused Mom Collins, Adapted
Lavender Sugar Rim:
- 1/2 cup sugar
- 3 tbsp. lavender sanding sugar (this adds some nice color)
- 2 tbsp. lavender flowers, dried
- 1/2 of a vanilla bean pod, scrape out those yummy seeds
- juice of a lemon
Combine the first four ingredients and mix well. The fragrance is so overwhelming! When ready to serve rub each glass rim with a little lemon juice and dip the glass into the sugar/lavender mix.
Lavender-Infused Simple Syrup:
- 1 cup sugar
- 1 cup water
- 2 tbsp. lavender flowers, dried
Combine the sugar and water in a small saucepan; heat and stir until the sugar dissolves. Add the lavender and let steep for 10 minutes; then drain the lavender.
Mom Collins Per Drink:
- lots of ice cubes – I used lemon zests, raspberries and some of my tiny pansies to make some pretty ice cubes
- 2 oz. gin – too strong for me, I would only use 1 oz. or leave it out
- 1-1/2 oz. lavender-infused simple syrup
- 1-1/2 oz. fresh lemon juice
- sparkling water or club soda
- lemon slices for garnish
To Serve:
Rub each glass rim with lemon juice and dip in the lavender sugar. Add a couple of ice cubes, gin, lemon juice and lavender simple syrup and stir. Add more ice cubes and top with the sparkling water. Garnish with a lemon slice and enjoy 🙂

This looks like a really refreshing, yummy drink. Good to have at our Fiesta party 🙂
Thanks Jess – perfect “party” drink 🙂
Yummy!!
Thanks 🙂
Happy Mother’s Day, dear Juju! xx 🙂
Thanks a lot Fae – hope you had a nice day 🙂
Another flower winner! You’ve inspired me so much that I might have to run out and see if my violets are still viable!
Mine are still going strong with this cool weather – love the spring flowers.
These are gorgeous! I love the little additions like the lavender sanding sugar and the pretty ice cubes; it really gives it a personalized touch. You’re also so lucky to be able to grow your own lavender. That’s nearly impossible here in Brooklyn haha 😀
The ice cubes are fun to make and always are a nice addition to any drink. I have over 12 lavender plants and they give me a supply year round 🙂
I absolutely love your recipe! Thank you so much for sharing!
Have a lovely day, dear!
Thanks so much 🙂
Wow this sounds nectarous. .. 🙂 🙂
Perfect beverage for this time of the year 🙂
I have lavender in the garden, it’s not doing too well. I give it too much water. Might be easier for me to just buy so I can actually try it in a refreshing and pretty drink such as this. Happy belated Mother’s Day!
Thanks Angie – lavender is one herb that does not like “wet feet”. We have had a ton of rain and a couple of my plants are struggling. I have quite a few plants so hopefully most of them will be okay 🙂
Sounds like a wonderful beverage!
It sure is Nancy 🙂
Ooooo yum, this looks like one refreshing drink that is begging to be made. Love all the ingredients and the addition of lavender….how absolutely lovely!
Thanks Loretta – an excellent warm weather drink? Hope you had a lovely Mother’s day 🙂
