Happy Holidays to everyone with one last treat – Oreo Lollipops! While shopping recently at my local baking store they had these cute chocolate covered Oreos on a stick for sale. I knew I could make these at home and I already had everything but the Oreo cookies. I bought two sizes; double-stuff and mega-stuff as I was not sure which filling would be better for the sticks I had. You can make these any time of the year, just change the sprinkles and sugar decorations.
Oreo Holiday Lollipops
- Oreo cookies, either double-stuff or mega-stuff
- chocolate, I used milk chocolate
- coconut oil
- sugar decorations
- sprinkles (add while the chocolate is still wet)
- small bags and ribbon
Remove the wrapping from the cookies and keep them in the tray they were packaged in. Pop them in your microwave for about 20 seconds; just long enough to barely soften that yummy cream filling. Immediately place a stick into the filling of each cookie being careful not to crack the cookie. Carefully remove and melt a little chocolate, dip one end of the stick in it and place back in the filling. Allow to harden while you make the chocolate coating.
Per 1 cup of chocolate add 1/2 to 1 tbsp. coconut oil depending on the chocolate you are using. I used milk chocolate and 1 tbsp. coconut oil (solid form) and it was a tad thin. The oil makes it easier to dip the cookies and coconut oil tastes better than say vegetable oil. Microwave for 50 seconds, stir and microwave for 30 seconds. Stir again and the chocolate should be melted.
Dip each lollipop into the chocolate to cover, letting the excess drip off. Add your sprinkles now if you are using. Place on a parchment lined baking sheet and place in the freezer for 10 minutes. Remove and trim the edges if needed. Apply a sugar decoration or use sprinkles if desired with a small dab of melted chocolate. Allow to dry and place in bags tied with ribbons.
