I love coleslaw and I would make it all of the time if there was more interest in my family. Gene was not crazy about it so I rarely made it unless we had a crowd and I had potato salad and all of the other goodies too. Now, I am making small portions so I can continue to enjoy it 🙂 I am surprised I have not posted this yet but I have been straying away from publishing my older recipes and opting for new ones!
JuJu's Favorite Coleslaw
- green cabbage, cut in wedges and shredded (about 8 cups)
- carrot, shredded to add some color (I did use carrots from my garden)
- a couple pieces of onion, shredded together with the cabbage and carrot (optional and I always add)
- 1/2 cup mayonnaise (I did use low fat)
- 1/4 cup sugar, or more to taste
- 1/3 cup milk (I did use skim)
- 3 tbsp. white vinegar
- 2-1/2 heaping tsp. horseradish (more or less to taste – pure horseradish roots that have vinegar and salt in it)
- 1/4 – 1/2 tsp. salt
- 1/2 tsp. pepper
You can easily cut this recipe in half and as always make it to your taste. I like to use my food processor for the shredding and I put wedges through the feeder 3 times as I like small pieces of cabbage. I will also put in the carrot and a little onion with a wedge or two of cabbage and process it together. This is one of the times I wish I had a bigger feed tube as it does get a little messy putting the shredded cabbage in three times.
Combine the rest of the ingredients and add to the cabbage mixture. Stir well and chill until serving. Serve with a slotted spoon as it will become watery.

I’m not a huge cole slaw fan, but this looks really good, Judi. Not too thick with dressing, and looks perfect for a summer meal with a hamburger. Love your carrots!
Thanks – this is a lighter cole slaw and does not have a heavy dressing. My carrots are cute – I try to grow the smaller varieties and these are perfect for a small raised bed garden 🙂
Yes, I was thinking the carrots will be perfect for next year’s raised bed garden. They also have a small round variety of carrots I will have to look into. It won’t require the bed to be that deep either. 🙂
The ball ones are called Thumbelina and would be perfect 🙂 The “Short n’ Sweet are 4-5 inches long!

Coleslaw as a side is perfect with any grilled food – we just had it with turkey burgers, grilled corn and some baked beans which I cooked all on the grill (except the coleslaw of course) 🙂
Horse radish in coleslaw, that is my kind of coleslaw too. 😛
