Rainbow trout is one of the easiest fish to cook on your grill. My fishmonger always guts and cleans them for me so they are ready to be stuffed and then grilled.
This time when I bought this yummy fish they weighed about 1/2 to 3/4 lb. each. A little on the small side as I like them to be about 1 pound. I use my grill a lot during the summer – I try to minimize turning on my oven. You can fix a veggie along with the trout and a salad on the side and there you have it no cooking inside!
Grilled Whole Rainbow Trout
- rainbow trout, gutted and cleaned
- olive oil to season
- kosher salt and ground black pepper to taste
- lemon thinly sliced for the stuffing and lemon medium sliced to place on the grill
- onion, thinly sliced
- sprigs of fresh dill and lemon thyme if you have it; of course you can use any herb you like such as mint and oregano or sage, parsley and rosemary
Rub the inside and outside with oil and sprinkle with salt and pepper. Layer the inside with lemon and onion slices and place a sprig or two of dill and thyme on top. When the fish is bigger I like to tie it up with string to keep the stuffing inside and not outside when you flip the fish. I did not with this fish as they were on the small side. However, the head flew off when I did turn one, but that was okay LOL!
Preheat your grill to high. Spray the grates with oil, place the medium size lemon slices down and place your fish on top of the lemon. Turn the heat down and grill anywhere from 7 to 10 minutes on each side. Cook until the fish flakes easily with a fork.
