This is a recipe from the Taste of Home Test Kitchen which I have adapted to my taste.
Grilled Parmesan Potatoes
- 1 lb. small red potatoes, skin on or use a mixture of red, blue and white
- 1/4 cup to 1/3 cup green onions, chopped
- 2 tsp. vegetable oil
- 2 tbsp. Parmesan cheese, grated plus more for topping
- 1 tsp. dried oregano or use fresh
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper
Chop up the potatoes into 1/2-inch cubes and place in a large bowl. Add the rest of the ingredients and mix well. Spray heavy-duty foil (about 18-inch x 12-inch) with nonstick cooking spray. These potatoes have a tendency to stick because of the cheese.
Fold foil into a pouch and seal tightly. Preheat the grill for 15 minutes and grill on high to medium for 30-45 minutes or until tender. Open carefully, serve in a bowl, adjust the seasonings and top with additional cheese if desired.
Comment: There are grill pans you can use if you do not want to use foil; you will just have to clean it obviously.
