Pork Marinated in Coke

There are lots of recipes where some type of soda is used to marinate meats and as an ingredient in cakes or even baked beans.  In addition to this pork recipe I have recipes for root beer Baked Beans Three Ways, Boneless Hams in the Slow Cooker Four Ways or Boneless Hams Using Cola or Dr. Pepper .

Pork Marinated in Coke

  • 1 (12 oz.) can regular coke
  • 1/4 cup soy sauce
  • 3/4 tsp. garlic powder
  • 3/4 tsp. ginger
  • 3/4 tsp. dried mustard
  • 1/2 tsp. pepper
  • either use a pork tenderloin or bone-in pork loin chops

When I am marinating meat or vegetables I like to use a big plastic bag.  Combine the first 6 ingredients and mix well; add to the bag (save a little for basting if you are planning to grill your pork).  Then add the meat and turn to coat.  I usually refrigerate overnight – the pork will have more time to absorb the marinade.

Drain and discard marinade from the pork.  If it is a pork tenderloin, brown lightly, then cook in a preheated 400°F oven for about 20-30 minutes, depending on the size of your tenderloin.

If you are grilling chops outside, cook over medium heat for 10-15 minutes on each side, while occasionally basting with reserved marinade.

Served with grilled mini zucchini and carrots. Also, a delicious black bean sauce
