This special kitchen gadget turns out light and puffy 2-1/4-inch pancakes that can be filled with all kinds of ingredients such as jam or cheeses.  A Danish treat that is sure to bring smiles to those you cook for.

I have a Nordic Ware pan which I purchased from Williams-Sonoma (I buy many of my “gadgets” there).  It is made of cast aluminum, has 7 wells and is nonstick.  Mine sits on top of a gas burner, but now they also sell an electric one for $20.00 more.  The electric one has 2 additional wells and might be easier to use.  For now I am happy with what I have.  Update below!

Well I finally bought the electric one along with a good cookbook on making all kinds of these Danish pancakes.  I have yet to try it but I am sure the ebelskivers will turn out great.  This is available at Williams Sonoma.
