What a delicious Danish treat to serve your special someone any day of the week. A lot of ingredients and a little bit of work but very good. This is just one recipe from Williams-Sonoma for making ebelskiver pancakes. You can also use different kinds of jam for a filling, nuts or even cheese.
Danish Ebelskiver Maple Pancakes
Filling:
- 5 tbs. maple butter (you can make your own – 1/2 cup softened butter and 1/8-1/4 cup Michigan maple syrup, or buy it already prepared)
- 1/2 cup pecans, toasted and chopped
- pinch of salt
Batter:
- 1-3/4 cups flour
- 3/4 tsp. baking soda
- 1 tsp. baking powder
- 1-1/2 tbsp. sugar
- 1-1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. allspice
- 3/4 tsp. salt
- 3 egg yolks, whisk lightly
- 1-1/3 cups buttermilk
- 1/2 cup sour cream
- 5 egg whites, beaten to stiff peaks
- 5 tbsp. butter, melted
Topping:
- 1 tbsp. confectioners’ sugar
- 1/4 tsp. cinnamon
Combine the maple butter, pecans and a pinch of salt.
Whisk together the flour, baking soda, baking powder, sugar, cinnamon, nutmeg, allspice and the salt. In another bowl combine the egg yolks, buttermilk and sour cream. Add the wet ingredients to the flour mixture and stir well; the batter will be lumpy. Gently fold half of the egg whites into the batter, then fold in the remaining half.
Place the pan over the burner and heat. Put a 1/2 tsp. butter in each well, add 1 tbsp. batter and cook for 2 minutes (it took only 1 minute on top of a burner on my gas stove). Spoon 1 tsp. maple filling into the center of each pancake and top with 1 tbsp. batter. Cook until the bottoms are nicely browned, another minute or two. Flip the pancakes over and cook another 2-3 minutes.
In a bowl, combine the confectioners’ sugar and cinnamon and sprinkle on top of the pancakes.
