Raspberry and Maple Syrup Vinaigrette

This is a great salad dressing to serve over a combination of lettuces such as bibb, red leaf lettuce, and a little radicchio.  Serve with crumbled bleu cheese, pine nuts and a slice of red onion.    Raspberries and maple syrup – yum!  These are two of Michigan’s best products and I never run out of either.  See also Martha’s Vineyard Salad.

Raspberry and Maple Syrup Vinaigrette

  • 1/2 cup raspberry vinegar
  • 1/2 cup olive oil
  • 1/2 cup peanut oil
  • 1/2 cup maple syrup
  • 1 tbsp. Dijon mustard
  • 1 tbsp. tarragon leaves, minced
  • 1 tsp. salt (or to taste)

Combine all ingredients and blend well.
