Peanut butter is enjoyed in my family whether in a sandwich, a stir-fry sauce or especially cookies. See also Peanut Butter Chocolate Chunk Cookies.
Peanut Butter Cookies
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1-1/4 cups flour
- 3/4 tsp. baking soda
- 3/4 tsp. baking powder
- 1/4 tsp. salt
Combine the butter, peanut butter, both sugars and the egg. Combine the dry ingredients and blend in with the peanut butter mixture. Cover and chill.
Heat oven to 375 degrees. Shape dough into 1-inch balls. Place 3 inches apart on a lightly greased baking sheet. With fork dipped in flour, flatten in crisscross pattern to 2 inches.
Bake 10 to 12 minutes or until set but not hard. Do not overcook.
Makes about 3 dozen
Chocolate or Jelly Drizzle (optional):
Microwave 1/2 cup or more semi-sweet chocolate chips until smooth – do the same with jelly. Drizzle over the cookies after they have cooled.
