This is an excellent sauce to add to any kind of vegetable. When you want your vegetables to have a little something extra, make this three cheese sauce.
- olive oil
- 2 tbsp. green chilies, chopped
- 7/8 cup sharp cheddar cheese
- 3/4 lb. cream cheese, softened
- 1/4 lb. Muenster cheese
- 1 cup water
- 1/4 cup cornstarch
- 2 cups milk
- 1 tsp. white pepper
Saute chilies in a medium saucepan briefly for 2 minutes. Add cheeses and stir as they begin to melt.
Dissolve the cornstarch in 1/4 cup of the water. Slowly add the remaining water to this mixture, then stir into the melted cheeses. Add milk and white pepper. Stir constantly while bringing to a simmer over low heat.
