A must have cheese spread when the southern clan gets together. It has been called the “caviar of the south” according to the Food Network Magazine even though it originated in the North. No two family recipes are the same. It is very versatile and you could use it as a dip but my mother-in-law always made sandwiches, with lettuce and tomatoes, and maybe a little extra mayonnaise.
Pimento cheese Sandwich
- 1 (4 oz.) jar of pimento, diced (including juice)
- 8 oz. sharp cheddar cheese, shredded
- 8 oz. mild cheddar cheese, shredded
- 1/2 cup Hellmann’s
- pinch of sugar
Combine all ingredients and serve with crackers or make a sandwich. Sometimes I like to grill the bread. Pimento cheese could also be good in grits or rice…
