Doritos Casserole

If you love Doritos you will enjoy eating this appetizer.  A snap to put together and it takes less than 30 minutes to cook.

Doritos Casserole

  • 1 (13 oz.) bag of Doritos (reserve 2 cups for topping and set aside)
  • onions, chopped to taste
  • 1 (10 oz.) can chili with or without beans
  • 1 (15 oz.) can enchilada sauce
  • 1 (8 oz.) can tomato sauce
  • 1-1/2 cups sharp cheddar cheese, shredded

Topping:

  • 2 cups Doritos (reserved from above)
  • 1/2 cup sharp cheddar cheese, shredded
  • 1-1/4 cups sour cream

Crumble 6 cups of Doritos into a large bowl.  Add the rest of the ingredients except for the topping and combine.  Place mixture into an 8-1/2 x 11-inch baking dish.  Bake for about 20 minutes in a preheated 375°F oven.

Remove from the oven and spread the sour cream over the top of the casserole.  Top with 2 cups Doritos and sprinkle with 1/2 cup sharp cheddar cheese.  Bake for an additional 5 minutes or until the cheese is melted.  Serve with tortilla chips.
