You can make these any time of the year and you do not have to have a cute pan to make small pumpkins for Thanksgiving (see picture below) or a ball pan to make Christmas ornaments. These are a lot of fun though and the kids really like to help make and decorate their own dessert. Just be sure the Rice Krispies mixture is not to hot (you want it warm) to handle.
Rice Krispies Treats
- 1/2 cup butter
- 8 cups miniature marshmallows
- 12 cups Rice Krispies cereal
- Icing colors (orange for pumpkins, red and green for ornaments)
- royal icing for decorating the pumpkins or ornaments
- small green gumdrops for the stems if making pumpkins and various colors for the ornaments
Melt butter, stir in marshmallows until melted. Stir in icing color (start with just a little, then add more to get the color you want). Then add the Rice Krispies and mix well. Spray the mini pumpkin or ball pan with a vegetable pan spray.
Press cereal mixture into pan and then unmold. You need to work quickly and be sure your hands are buttered as the mixture is very sticky. Cool and decorate as desired with royal icing. See my recipe for Royal Icing.
You can also wrap the the rice krispies treats around mini milky ways or musketeers candy bars and then shape into a ball/pumpkin shape.
Another way to decorate pumpkins would be to use small green gumdrops for the stems and pipe frosting on each for vines.
