When the weather is warm and it is too hot to heat up your kitchen, cooking on the grill offers a lot of choices for some quick and easy dishes.
Beef Kebobs on the Grill
- 1 small-medium onion, chopped
- 1/2 cup vegetable oil
- 1/4 cup lemon juice
- 1/4 cup soy sauce
- 1 tbsp. Worcestershire sauce
- 1 tsp. prepared mustard
- 1-1/2 lbs. sirloin, cut into 1 to 1-1/2-inch cubes
- green or red bell peppers, cut in pieces
- onions, cut in small wedges ( hold together with a toothpick while they marinate)
- zucchini, cut in pieces
- other vegetables of your choice
Saute the chopped onion in a little oil for 5-10 minutes; remove. Add the next 5 ingredients and combine. Separate the meat and the vegetables in 2 different bowls. Pour some of the marinade over the beef cubes and the rest over the vegetables. Cover, and marinate for 12-24 hours.
Comment: I like to make a little more marinade to use for basting and serving with the kebobs.
Drain meat and vegetables and do not keep this marinade. You can keep it if you boil it for 5-10 minutes before using. Arrange meat and vegetables on separate skewers and grill for about 10-20 minutes on medium heat depending on your grill and the size of the kebobs. Brush additional marinade over vegetables and meat while they are cooking. Bring the additional marinade to boil and serve with kebobs or my Peanut Dipping Sauce. Rice always goes nice with this dish.
