What a great salad and so simple to make. Be sure to use a good quality blue cheese such as Maytag for the best results which was a favorite of Gene’s. I have included a Weight Watcher’s recipe as well – not bad but there is a difference between the two.
Romaine wedges with a Tangy Blue Cheese Vinaigrette
Maytag Blue Cheese Vinaigrette:
- 1/2 cup olive oil (I use extra-virgin)
- 3 tbsp. white balsamic vinegar
- 1-1/2 tsp. anchovy paste (this comes in a tube)
- 1 garlic clove, minced
- 1 cup crumbled blue cheese (I like to use a little less and Maytag blue cheese)
- hearts of romaine, separated and placed on 4 plates
- 1/2 small red onion, thinly sliced
Combine the first 4 ingredients to blend. Whisk in cheese. Season with salt and pepper but you really do not need any as the anchovy paste and cheese add enough salt.
Place romaine leaves on plates and drizzle about 1/4 cup dressing . Top with red onion and anything else you might like. I also like to grill mini romaine hearts for this salad. Cut the hearts in half, brush with oil and add salt and pepper to taste. Preheat your grill to medium high and grill a few minutes on the cut side.

Weight Watcher’s Blue Cheese Dressing:
- 1/3 cup low-fat buttermilk
- 1/3 cup fat-free sour cream
- 2 tbsp. red wine vinegar
- 1 tbsp. parsley, chopped
- 1/4 tsp. black pepper
- 1/2 cup reduced fat blue cheesse
Combine all of the ingredients and serve over romaine or iceberg lettuce.
