Wontons with Six Dipping Sauces

These appetizers are a good do ahead recipe for a special college football game tomorrow night; Notre Dame versus Alabama. I received my Masters in Library Science at the University of Michigan but Notre Dame holds special memories.  First, my Dad attended, then my youngest sister was in the first freshman class when they first accepted women … Continue reading

French Toast Five Ways

Happy New Years!  How is this for a great start to the New Year or for any morning for breakfast?  In my home this is a preferred meal of the day and oh so good with fresh bread from your bread machine (see my recipe Maple Buttermilk Bread in the Mini Zo) and delicious Michigan maple syrup.  … Continue reading

Risotto Milanese Two Ways

Gene enjoyed long grain rice but preferred  a short grain rice called arborio  to be used in a risotto.    Orzo was another favorite of his which is also a short grained rice/pasta – see my recipe Savory Orzo.    I have a risotto cooker, Kitchen Gadgets – Breville Risotto Plus, which I love to use.  This gadget cooks not only risotto but rice and … Continue reading

Weight Watcher’s Spicy Orange Chicken

This is a great stir-fry recipe where as always you can use any vegetables you want and it is a Weight Watcher’s dish.  The recipe called for using broccoli and carrots but I used snow peas, onions,  celery, carrots and red pepper.  I prefer to cook a lot of vegetables versus just a few.

Weight Watcher’s Mini Pumpkin Cheesecakes

These cheesecakes are a nice small dessert and only 3 points per cheesecake.  The problem is I could eat all 4 and 12 points for a dessert is a big no-no!  I have a bigggg weakness for cheesecake even if it is a Weight Watcher’s recipe.

Weight Watcher’s Broccoli and Cheese Frittata

This frittata is quite good and cheesy  and the recipe came with some coupons from my local Kroger store.  There are a number of food items that Weight Watcher’s sponsors and Green Giant Broccoli and Cheese is one of them.  See also Weight Watcher’s Western Omelet.

Dried Fruits and Vegetables

I have not used my dehydrator in awhile so I thought I would see how zucchini, apples and bananas turned out.  In the past I mainly used my dehydrator to dry many varieties of peppers or citrus fruits.  You just plug it in, turn the temperature to 135 and dry depending on the product, the size, whether you … Continue reading

Weight Watcher’s Pesto Two Ways

I was a little hesitant to make a Weight Watcher’s pesto when the “real” thing is so good.  See also my recipe Pesto where I have included some information on why basil turns brown and how to prevent it.  I had a lot of basil that needed to be used before it started to flower, so why … Continue reading

Blueberry Streusel Muffins

These Weight Watcher’s muffins are packed with blueberries and a delicious crumb topping.  Pretty good for only 4 points per muffin!  See also my recipe Banana Blueberry Muffins. These are much better than the store-bought Weight Watcher’s blueberry muffins!
