This frittata is quite good and cheesy and the recipe came with some coupons from my local Kroger store. There are a number of food items that Weight Watcher’s sponsors and Green Giant Broccoli and Cheese is one of them. See also Weight Watcher’s Western Omelet.
Weight Watcher's Broccoli and Cheese Frittata
- 1 (10 oz.) box Green Giant Broccoli and Cheese (I took out some of the big chunks of stalk and substituted some chopped red pepper)
- 1 cup egg substitute
- 1/4 cup shallot or onion, minced (I always add more)
- pinch or two of cayenne pepper
- salt to taste
- fresh dill, minced (optional)
Cook broccoli and cheese according to package directions. Pour into a bowl (I like to remove the bigger stalks of broccoli – I am a flower person). Add egg substitute, shallots or onions, chopped red pepper, salt and pepper to taste and dill if desired.
Spray 2 standard sized nonstick omelet pans with cooking spray. Heat pans over medium high heat and pour in egg mixture (I would cook on medium). Cook, without stirring, for 5 to 7 minutes, or until bottom is set (5 minutes was enough for me). Move pan to oven and broil on low for an additional 5 minutes or until top is set.
Makes 2 frittatas and only 3 points per frittata – yum…
