I originally saw this recipe a long time ago in a Martha Stewart cookbook and we have enjoyed it ever since. The sauce with the fresh thyme is very tasty!
Pork with a Soy Orange Sauce
- 3/4 cup orange juice
- 2 tbsp. soy sauce
- 1 tsp. sugar
- 1 clove garlic, minced
- 1/4 tsp. pepper
- 8 sprigs fresh thyme – fresh makes a difference!
- 2 tbsp. butter (I use less)
- 2 tbsp. oil (I use less)
- 8 lean pork chops (or a pork tenderloin)
Combine the first 6 ingredients and set aside. Score the pork chops 1/8-inch deep in a crisscross pattern on each side. Place in a dish and pour the marinade over the chops. I like to marinate these overnight but a few hours is fine.
Heat the butter and oil; add the chops and saute for about 3-5 minutes on each side, browning them well. Reduce heat to low and pour reserved marinade over chops. Cook until done, about 8-10 minutes more. Remove the chops and keep warm.
I also like to use a pork tenderloin instead of the chops. Brown on all sides and bake in a 400 degree oven for about 20-30 minutes depending on the size of your tenderloin.
Reduce the marinade to 1/3 cup and pour over the cooked chops or tenderloin. I enjoy my Black Bean Sauce with this recipe.
