Cooking Tidbits – Maple Syrup Grading

While reading Midwest Living Comfort Food 2012 last fall there was some specific information about how syrup is graded.   Kind of interesting, producers need to collect 40 to 50 gallons of maple sap to make 1 gallon of syrup.  It is graded according to how much light shines through the cooked liquid and the grading system … Continue reading

Maple Syrup Festival

One of the first rites of spring in southern Michigan is the tapping of the maple trees.  A festival was held this past weekend (March 9-10, 2013) for the communities of the Big 400.  It is an area of about 400 square miles which includes the counties of Jackson, Washtenaw (I live here), Livingston and Ingham. … Continue reading

Maple Brined Pork Tenderloin

Over the holidays one of my sisters  checked my site for any information on brining a turkey (I had not posted any recipe yet) and that has prompted me to look into brining again.  I have not done a lot of brining mainly due to health issues in my family.   Too much salt in your diet is not good!   … Continue reading

Maple-Glazed Party Mix

Danish Ebelskiver Maple Pancakes

What a delicious Danish treat to serve your special someone any day of the week.  A lot of ingredients and a little bit of work but very good.    This is just one recipe from Williams-Sonoma for making ebelskiver pancakes.  You can also use different kinds of jam for a filling, nuts or even cheese.

Maple-Jalapeno Sour Cream

Sweet potatoes are great on their own, but occasionally I like to serve this flavorful sour cream.  Maple syrup, sour cream and jalapenos – these are good things when combined together.

Old-fashioned Gingerbread Cake

This cake reminds me of my Mom’s recipe and she always served it with whipping cream.    I also like to have a sauce to top it off, see my recipe Lemon Sauce for Desserts. Creme anglaise would also be delicious served with this cake (see recipe below).
