Sweet potatoes are great on their own, but occasionally I like to serve this flavorful sour cream. Maple syrup, sour cream and jalapenos – these are good things when combined together.
Maple-Jalapeno Sour Cream on Sweet Potatoes
- sweet potatoes, cooked
- 1/2 cup low-fat sour cream
- 1 tbsp. good Michigan maple syrup
- 2 tsp. jalapeno, seeded and minced
- 1 tsp. fresh lime juice
- Tabasco sauce to taste
- bacon bits
- scallions, sliced
Bake sweet potatoes for 45 minutes to an hour in a 400 to 450 degree oven.
Combine sour cream, syrup, jalapeno, lime juice and Tabasco. Chill and serve over sweet potatoes with some bacon bits and scallions.
