Baked Onion Rings Three Ways

Most of the time I bake my onion rings instead of frying them.  I have always used regular onions, not the sweet ones as their water content is high and they will steam instead of crisping up.  This is a Weight Watcher’s recipe with only 2 points per serving.

WW Baked Onion Rings

  • 2 tbsp. flour
  • 1/4 tsp. salt
  • freshly ground pepper
  • 1/3 cup plain bread crumbs (I use seasoned)
  • 1/4 cup egg substitute
  • 2 large onions, peeled, sliced 1/4-inch thick, and separated into double rings not single ones

Preheat the oven to 400°F.  Spray a baking sheet with nonstick spray.  Combine the flour, salt and pepper in one bowl; the seasoned bread crumbs in another bowl; and the egg substitute in a third bowl.

Coat each double onion ring on both sides with the flour, shaking off the excess; dip into the egg substitute, then coat lightly with the bread crumbs.  Arrange the rings on the baking sheet and spray the tops with cooking spray.

Bake until browned, about 10 to 15  minutes.  Turn and bake another 10 to 15 minutes.

Weight Watcher’s just released a new recipe for baked onion rings which I thought I would include.  There are 4 points with this recipe.

WW Baked Onion Rings II

  • 3 sprays cooking spray
  • 1 cup cornflake crumbs
  • 1 large egg white
  • 1/3 cup low-fat milk
  • 1/4 cup flour
  • salt to taste
  • 1/8 tsp. cayenne pepper
  • 1 large onion, sliced into 1/4-inch round, separated into rings

Preheat the oven to 450°F.  Coat a large, rimmed baking sheet with cooking spray.

Place cornflakes on a large plate and whisk together the rest of the ingredients (except the onions) until blended.

Dip onion rings first in egg mixture and then dredge in the cornflake crumbs, turning to coat both sides.  Place on prepared pan.

Coat onion rings with cooking spray and bake, turning once about 12 to 15 minutes.

You get 8 onion rings per serving for 4 points.

A third recipe I just found by Weight Watcher’s and this recipe is called “Super-Crispy Onion Rings” and has an Italian twist.

WW Super Crispy Onion Rings

  • 1/3 cup flour
  • 1 cup low-fat buttermilk
  • 1/2 tsp. black pepper
  • 1/2 cup Italian seasoned dried bread crumbs
  • 2 large onions, cut into 1/2-inch rounds (about 32)

As in the directions above; first dip in flour, then buttermilk and pepper, then bread crumbs.  Bake in a 400 to 450°F oven for 10 to 20 minutes or until nicely browned.
