Weight Watcher’s Chicken Casserole with Saffron

This is a flavorful Weight Watcher’s casserole full of chicken, veggies, rice and a nice touch with the saffron.  There are 8 PointsPlus per serving which is 1/4 of the dish.  I have been wanting to use some saffron a sister brought back from her trip to Italy, among other things  like tomato seeds for … Continue reading

Balsamic Vinaigrette Over Homegrown Lettuce

My first harvest of my own Fall lettuce in my raised beds (use to have a 40×120′ garden) and I made a very simple vinaigrette to dress my greens with.  Yes, I planted lettuce – I meant to post some other pictures of what I grew this year (especially my tomatoes) in my (three)  3′ x 6′ raised cedar … Continue reading

Grandma’s Applesauce

I first posted this recipe almost 2 years ago as it was that time of the year to make and can applesauce which has been a yearly Fall ritual for many years.  It is also one of my oldest recipes as this comes from my Grandmother on my Dad’s side.  I use to can a couple  bushels of Cortlands but … Continue reading

Pesto Chicken Panini

These sandwiches were a big hit beginning in the early 2000s and as far as I am concerned are still a hit.  The flavors blend together so well under the weight and heat of the Panini press.  With sun-dried and green basil pesto (homemade) what a combination this Panini is.  Now is the time to … Continue reading

Blackberry Jam

I tried another jam in my Kitchen Gadgets – Automatic Jam & Jelly Maker, a maker called FreshTech by Ball.  This time it was blackberry jam.  Once again it turned out great using this handy machine that makes only four half pints.  Next time I will make jelly as there were too many seeds, even though … Continue reading

Zephyr Zucchini with Basil, Pine Nuts and Parmesan

At my Farmer’s Market recently a farmer was selling these two-toned crookneck zucchini called Zephyr and I just had to buy some.  How unique to have a yellow squash that is tipped with green at the blossom end.  Besides their designer appearance is the delicious nutty flavor.  These are now a favorite and I will have to go to the Market … Continue reading

Thai Chicken with Rice and Vegetables on the Grill

Back in late June  I picked my first jalapeno peppers from one of the three raised cedar vegetable beds (each is 3 x 6-feet) I  had installed earlier this summer.  I use to have a 40′ x 120′ garden (plus the corn/pumpkin patch) when we lived in the country.  Some old pictures… Travis and Bethany                                            Watering my garden … Continue reading

Grilled Green Beans Two Ways

I never  thought about grilling green beans  but in a recent Midwest Living magazine there was a recipe.  I liked the idea, but changed the directions and ingredients. Besides, I had to use my fresh green beans from my small garden I just planted this year.  Green bean plants growing with my antique black crow guarding … Continue reading

Cucumber Melon Salsa

I like to serve salsas alongside a main dish especially during the summer  months when all of the vegetables and fruits are so fresh here in Michigan. Cantaloupes are a favorite fruit when they are ripe and juicy.  I use to grow them in Manchester in my big 40 x 120′ garden.  My only problem was so many of … Continue reading

Cantaloupe with Lavender Syrup

Normally I just like my cantaloupe plain, but once in awhile it is nice to serve it as a light dessert.  Making a simple lavender syrup makes the cantaloupe shine.
