Weight Watcher’s Spicy Orange Chicken

This is a great stir-fry recipe where as always you can use any vegetables you want and it is a Weight Watcher’s dish.  The recipe called for using broccoli and carrots but I used snow peas, onions,  celery, carrots and red pepper.  I prefer to cook a lot of vegetables versus just a few.

Chicken with Balsamic Vinegar and Sweet Onions

A Weight Watcher’s recipe with three of my favorite ingredients; balsamic vinegar, onions and thyme.  Delicious together and another recipe that I have changed just a little.  After eating some Krispy Kreme Monkey Bread for breakfast yesterday I needed to be careful of what I had for dinner!

French Market Soup

This was a fun soup to make with all of the different beans and peas (13 different kinds – see Soup Mix)  I made up the soup mix and gave the beans to family and friends with this recipe.  Now you can buy soup mixes already made up but I still like to make up my own.

Lemon Chicken With Onions and Potatoes, Updated

Balsamic Chicken

This is an entree that every age seems to enjoy.  A very easy dish to prepare the night before, let marinate and pop in the oven the next evening.    

Chicken Marsala

This is a classic chicken dish which has been lightened up a bit and is also low in sodium, but you still get that wonderful taste.  Serve this entree with egg noodles, linguini or cheese tortellini.
