Overnight Oats with Yogurt, Chia Seeds and Banana for One

This recipe by Min Kwon, M.S., R.D. was part of an email I just received from Food Network. One look at the ingredients and I knew this would be delicious and healthy too. Besides, I had all of the ingredients to make this for breakfast.

What a nice breakfast of oats, strawberry yogurt, chia seeds and 1/2 banana topped with fresh fruit…

Overnight Oats with Yogurt, Chia Seeds and Banana for One

  • 1/3 cup dairy milk, almond, cashew or coconut milk (I used 2% dairy milk)
  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup yogurt (I used Oikos Triple Zero blended Greek yogurt)
  • 1 tsp. chia seeds
  • 1/2 banana, mashed

Combine above ingredents in a jar and refrigerate overnight. 

Serve with fresh fruit, dried fruit, nuts, nut butter, protein powder, granola, coconut or any ingredient(s) of your choice.

Serves 1

NOTE: I have left out the yogurt before and the mixture is not so thick – I like it!

  1. This is a timely recipe for me – my cardiologist just this week recommended I include oats and chia seeds regularly in my diet to keep my heart healthy. Looking forward to trying this!

    • Thanks – I like this a lot and know you will too. Just make it to taste but do include oats and chia seeds. There are choices for milk (this morning I made it with unsweetened almond milk), yogurt and the banana is optional. The toppings can be your favorite nut, fruit, etc. 🙂 Add more liquid if it’s too thick!

  2. I think this is a great “go to” breakfast or anytime meal. I used to make overnight oats all the time and haven’t in quite awhile. Thanks for the inspiration.
