Salt and vinegar is one of my favorite flavour combinations, being very fond of salt and vinegar potato chips. The fries have the same delicious salt-and-vinegar taste and then they are baked besides. I’ve made a version using red potatoes and another using Yukon gold potatoes. Russet potatoes are the best due to their higher starch and produce a crispier crust – I would have to agree!

These were the best fries with a nice hint of vinegar and lightly salted…

Served with tilapia…

Garnished with chives; perfect side for a burger, steak or maybe some fish…
The Best Salt and Vinegar Baked Fries
- 2 cups distilled white vinegar
- 1/4 cup kosher salt, plus more for seasoning (I used Diamond Cyrstal)
- 3 lbs. russet potatoes, skin on
- 6 tbsp. canola oil
- chives, finely chopped for garnish
Preheat the oven to 450 degrees and place a baking sheet in the oven to heat. In a large saucepan combine 6 cups water, the vinegar and 1/4 cup kosher salt. Bring to a boil over high heat.
Cut the potatoes into 1/2-inch rounds and cut again into french fries.
Line another baking sheet with a kitchen towel. Put the potatoes into the water/vinegar/salt mixture, bring to a boil and boil for 8 minutes. Remove with a slotted spoon, they should be somewhat firm. Spread the potatoes out in one layer on the kitchen towel. Allow to cool and blot dry the tops if needed with paper towels.
Transfer the potatoes to a large bowl and toss with 2 tbsp. oil and 1 tsp. salt if desired.
Remove the hot baking sheet from the oven and spread the potatoes out. Return to the oven and bake until the undersides are brown and crisp about 20-30 minutes. Turn the potatoes with tongs, then bake another 20-30 minutes. I like to rotate the pan too as they bake.
Bake the potatoes to your taste and crispness – the time will vary depending on oven temperature and how crispy you like your fries. Garnish with more salt if desired and sprinkle with chives.
