Cannolis are creamy and chocolate and so easy to make (if you buy the shells or in this case cones). This recipe is very similar to Canolis With Chocolate Chips Two Ways. The big difference is using sugar cones which come in different flavors instead of the traditional cannoli wrap. I added melted espresso chocolate chips (made with real coffee) which coated the inside of each cone and also dipped the rim. What a great idea though!





Cannoli Sugar Cones
- 16 oz. whole milk ricotta (drain it overnight)
- 1/2 cup confectioners’ sugar
- 1/2 tsp. vanilla extract
- 2/3 cup mini chocolate chips
- 10 sugar cones (cut the above ingredients in half for 6 cones)
- 1 cup espresso chocolate chips for lining and dipping the cones (I was surprised to find this chocolate made with real coffee)
- 1 tbsp. coconut oil
- dust with confectioners’ sugar
Drain the ricotta overnight in cheesecloth or a mesh strainer in the refrigerator. This will remove excess liquid.
Combine the chocolate and coconut oil in a double boiler until melted and smooth.
Fill one cone at a time half full with chocolate and swirl it around the inside, allowing the excess to drip back into the double boiler. Then dip the rim in the chocolate and place in the cone holder to harden. When you are done filling all of the cones refrigerate for 30 minutes or so until the chocolate is completely hard.
In a large mixing bowl, beat the ricotta, confectioners’ sugar and vanilla until combined. Stir in the mini chocolate chips.
Right before serving fill the sugar cones with a piping bag or spoon the mixture into the cones.
