Lidia’s Roasted Winter Squash with Cranberry Sauce

This is a recipe I wanted to try over the holidays to see if maybe this dish with cranberries could win over those in my family who aren’t big fans of cranberries. The sauce is just drizzled over the squash and is not too tart or sweet; the veggies are delicious on their own but the cranberries give it a nice holiday touch. A delightful recipe to say the least – great combination of flavors and a perfect side for any dinner.

  • 1 small butternut squash
  • 1 acorn squash
  • 2 tbsp. EVOO
  • 2 tbsp. unsalted butter, melted
  • kosher salt and freshly ground black pepper to taste

Preheat the oven to 425 degrees. Now I remember why I don’t cook fresh squash very often as they are a pain to peel and cut. I did the best I could (not how Lidia did it) but I got chunks suitable for roasting.

Toss the squash in a large bowl with the butter and olive oil; season with salt and pepper to taste.

Spread out on a rimmed baking sheet. Roast for 15 to 20 minutes, then turn the squash over and roast another 20 to 25 minutes or until the squash is tender when pierced with a fork and the edges are beginning to brown. Place in a large bowl/plate and drizzle with the cranberry sauce.

Cranberry Sauce:

  • 2 cups fresh or frozen cranberries
  • 1/2 cup orange juice
  • 2-3 tbsp. honey (I used orange blossom)

Combine all the ingredients in a small saucepan and cook for 7 minutes or so until the cranberries pop and the sauce becomes thick. I felt it was a little tart so I did use 3 tbsp. of the honey.

  1. What a pretty Christmasy dish with all the different colors. Sounds delicious but I think I will buy the squash already peeled and cubed – I want to keep my fingers a bit longer!

    • Thanks TJ – Perfect side dish for a roast, ham or turkey. I have not found acorn squash already cut up as it provides a nice contrast with the butternut. I agree about buying it already cut up if you can find it! Happy New Year!!!

  2. Oh my goodness I would love this recipe! Not too many in my family eat cranberries either, in any form. I really think they’re missing out! Here’s hoping things get better around the world in 2022 – Happy New Year!
