TikTok is a video-sharing social networking app that allows users to create and share short form videos on any topic. It is the international version of China’s Douyin. To be honest I first heard about TikTok when Trump threatened to ban it in the United States – not sure why. I did however love this idea and have been enjoying my quesadillas this way ever since.
The “tortilla trend” on how to fold a quesadilla has enjoyed its 15 minutes of virality and has garnered more than 2 billion views on TikTok in a little over a week. It is a new way to enjoy a quesadilla with a simple cut that allows you to fold the wrap in on itself creating 3 or 4 layers of fillings. The ingredients don’t touch each other. No need to heat up the tortilla as it’s cooked in a panini press (my preferred way), a skillet or on the grill. Guests can customize their own quesadilla.
The big difference is the separation of ingredients between layers of tortilla. A tortilla (burrito is a nice size) is cut from one edge halfway up. The ingredients are placed on each quadrant, 3 or 4. Then its folded on top of itself to form a “piece of pie”. Easy to cook and no need to turn if you use a press, fillings seem to stay put unless you used too much!
Think about where you put your items – I placed my ingredients below so that the cheese and meat would be in contact with the panini. If lettuce is an ingredient you would want to put it in the center so it won’t wilt.
I started with the slightly cooked peppers and folded them over the tender onions, then the onions folded over on the cooked sausage with a little marinara sauce and last finely grated cheese…
You can use all kinds of different ingredient combinations:
Pizza Quesadillas hot Italian sausage, homemade marinara sauce, sweet peppers (any color), onions, mozarella cheese
Dessert – Nutella, sliced bananas and strawberries – maybe some nuts
Breakfast – scrambled eggs (I make them with a few chopped peppers, onions and cayenne pepper), bacon, cheese such as cheddar, grated
Mexican – BBQ meat, guacamole, salsa (can be added to taco meat) refried beans, cheese such as Monterey Jack
Taco – seasoned taco ground beef, sour cream, tortilla chips, lettuce and tomatoes, cheese
Ham – thinly sliced deli meat, lettuce, tomatoes, grated cheese with a spread of mustard
Greek – ground lamb, tzatziki sauce, red onion slices, feta cheese
Halloumi or Raclette Cheese – thinly shaved cheese, prosciutto, chives, cornichons
TikTok Hack for Folding Quesadillas with a Pizza Recipe
- sweet or hot Italian sausage, casings removed (I love hot)
- Italian seasoning to taste (won’t need if you use hot sausage)
- kosher salt and pepper to taste (won’t need if you use hot sausage)
- onions, sliced and cut in half
- fresh garlic, minced
- peppers (your choice), sliced and cut in half
- marinara sauce (homemade preferred or use Rao’s)
- flour tortillas – burrito size
- mozzarella cheese, grated (smaller the better for melting purposes)
- Parmesan cheese, grated
Remove the casings from the sausage and cook while breaking it up until there is no more pink showing. Add Italian seasoning, remove and set aside. I added a little marinara sauce to the cooked sausage.
In the grease cook the onions until tender, add minced garlic and toss for 1 minute; set aside. Cook the peppers briefly and set aside. I don’t like my peppers cooked too much.
Lay out your tortilla and with a pizza cutter, knife or kitchen scissors cut one slit up to the center of the tortilla. Think about where you want to place your ingredients; items you might want cooked like cheese put on the outside.
Fold the pepper quadrant over the onions; then the onions over the sausage (first spread a layer of sauce and top with a little grated cheese) and finally the sausage over the cheese.
I used my panini press and cooked the quesadilla until the light went off.

It’s such a simple and ingenious trick! I am amazed that no one thought of this earlier. I have tried to cook a quesadilla in the panini press in the past and it didn’t work, the filling all melted out. This is definitely a technique to keep in my back pocket. Thank you.
