Strawberry Cheesecake for Two

Cheesecake is high on my list of favorite desserts. There are times I really want a little taste but not enough to make a big cheesecake (unless I have company). This is a perfect recipe and the cheesecakes are just big enough to satisfy your taste buds. You can use different fruit and double or triple the recipe to fill all 6 wells.

Crust:

  • cooking spray
  • liners to fit wells of jumbo muffin tin
  • 2 graham crackers (honey)
  • 1 tbsp. unsalted butter, melted
  • 1 tsp. sugar

Preheat the oven to 325 degrees. Line 2 wells of a jumbo muffin tin with liners and coat with cooking spray.

Combine the graham crackers, butter and sugar until crumbly and holds together when squeezed. Divide the mixture evenly between the 2 liners and press it into the bottom and up the sides about 1/4-inch. Bake until slightly golden about 8-10 minutes. Allow to cool completely.

Filling:

  • 3 oz. cream cheese, softened
  • 3 tbsp. sour cream
  • 3 tbsp. sugar
  • 1 large egg
  • 2 tsp. flour
  • 1/2 tsp. lemon zest
  • 1/2 tsp. vanilla extract
  • pinch of salt

Process the above ingredients until smooth. If you need to press through a sieve to get out any lumps. Divide the batter between the 2 liners. Fill the empty muffin cups about halfway with water. Bake until they are just set in the center, 25-30 minutes. Let cool to room temperature.

Pop the cheesecakes out of the wells and refrigerate loosely covered until chilled, 4 hours and up to overnight.

Topping:

  • 2-3 large strawberries, finely chopped
  • 1 tsp. strawberry jam

Combine and chill until serving.

  1. Love the idea of individual portions of cheese cake, and the fruit topping! I don’t have a jumbo muffin pan, but I guess I can make four regular size ones from this quantity. Hope to play with it soon! 🙂

    • Thanks Ronit – cheesecake is a big weakness of mine so two small servings is just enough to satisfy my craving for it. Sure, you can use a regular muffin tin – then you would have 4 treats instead of 2 🙂 Easy recipe to adapt…
