Are you looking for a new holiday appetizer? Do you like Brie, bacon, maple syrup and walnuts/pecans? Then you will absolutely Iove this appetizer. Creamy, crunchy, salty bites of pure decadence. A perfect treat to serve any time of the year and only takes a few minutes to make.
When I have used a big wheel it sometimes does not get finished and Brie does not reheat very good. Using these mini wheels is the perfect answer to serve “just enough”.
This great recipe comes from Sunny Anderson on the Food Network Channel. I changed/added a few things…
This is a perfect recipe for a cheese platter or just on its own.
Brie Bites With Maple, Walnuts and Bacon, Adapted
- 10-12 mini Brie bites (rind is edible so no need to remove)
- 1/4 cup roughly chopped and toasted walnuts (or pecans)
- 1 tbsp. maple syrup (preferably Michigan but any pure maple syrup will do)
- 1 tsp. apple cider vinegar
- 5 slices cooked bacon, roughly chopped
- sliced scallions or chives for garnish
- 2-1/2-inch plain crackers
Preheat the oven to 250 degrees (I might raise the heat to 300 degrees as it seemed to take too long for the Brie to heat up – at least in my oven). Place the Brie wheels on a baking sheet and bake until warm and slightly oozy, 5-10 minutes. I cooked them longer than 3-5 minutes as Sunny suggested.
Combine the maple syrup, walnuts, vinegar and bacon bits. Place each warmed Brie wheel on top of a cracker and top each bite with a spoonful of this yummy mixture. Garnish with scallions or chives and serve immediately.

Thanks Ronit – I’m not sure how I would have responded if you didn’t like the Brie. We thought they were a perfect mini of a big wheel and not so much waste. I need to keep some in the fridge at all times for a quick appetizer 🙂
