Mini Quiche Lorraine Bites

Quiche Lorraine is a favorite breakfast/brunch treat and would even be good for a dinner buffet. The bacon is the key ingredient so be sure to garnish with extra crumbles.

Mini Quiche Lorraine Bites

  • 30 fillo shells (maybe more or less depending on how you fill them)
  • 2 tbsp. red onion, finely minced
  • 3 large eggs, beaten
  • 1/4 cup heavy cream
  • 1/4 cup Swiss or Gruyere cheese, finely shredded
  • 1/2 tbsp. flour
  • 1/8 tsp. kosher salt and 1/8 tsp. black pepper
  • 6 pieces of bacon (divided), cooked crisp and finely crumbled – 3 strips for the egg mixture and 3 strips to garnish
  • fresh chives to garnish or use thinly sliced green onions (green part only)

Preheat the oven to 350 degrees. Saute the red onion for a few minutes, allow to cool.

Combine the eggs, heavy cream, cheese, flour, salt and pepper and whisk until smooth. Add the cooled onions and 3 pieces of crumbled bacon.

Line a baking sheet with parchment or silpat.  The bacon likes to sink to the bottom of the mixture so I would suggest stirring and spooning it into the empty shells rather than pouring it. Be sure to get some bacon and fill almost to the top.

Bake for about 12 minutes or until eggs are set – they won’t jiggle any more!

Garnish with the other 3 pieces of crumbled bacon and chives.
