The next step after making your own apple cider is to make your own homemade boiled cider. It is so simple to do, just boil the cider down until it is somewhat thick like syrup. It does take a little time, almost 2 hours to boil down 8 cups to get 1-1/2 cups. You do need to watch it towards the end of the cooking time but it is so worth it to make. Of course you can purchase it through King Arthur Flour (KAF), cider mills and specialty stores.
I just love this product as you can use it so many different ways. Here are some possibilities to try and these ideas have come from KAF, Midwest Living and me:
- Use it in my recipes Apple Snickerdoodles or Gene’s Favorite Apple Pie
- Replace honey or molasses in recipes for gingerbread, apple cake and muffins
- Brush on grilled vegetables or fruit; mix with whole grain mustard to drizzle on meat
- Need a cup of apple cider? Add 1 tbsp. boiled cider to 3/4 cup water
- Make a glaze for muffins by mixing it with confectioners’ sugar
- Add to your favorite vinaigrette, barbecue sauce or make your own syrup (below) for pancakes
I found KAF’s boiled cider to be rather strong and is good combined with other ingredients. However, if you want to drizzle it over ice cream or oatmeal I would recommend using it diluted or use the homemade version which has a milder flavor.
Homemade Boiled Cider
- 1/4 cup brown sugar, packed
- 2 tsp. cornstarch
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1/8 tsp. ground cloves or allspice
- 1 cup boiled cider
- 2 tbsp. butter
- 1/2 tsp. vanilla
Combine above ingredients and heat and stir until the butter melts and the syrup is warm. Serve over your favorite pancakes or waffles.
So, what is boiled cider? It is made from pressed apples and then boiled until it becomes a rather thick syrup. It is tart-sweet and as KAF says “intensely apple-flavored”. Here again, like apple cider, it depends on the varieties of apples you are using and the combination of sweet, sharp and tart apples you choose.
In a 6 quart saucepan, bring 8 cups fresh apple cider or juice to boiling; reduce heat to medium. Try using my recipe for Homemade Apple Cider. Boil gently, uncovered, 1-3/4 hours, stirring occasionally, until cider has reduced to 1-1/2 cups. Remove from heat; cool and transfer to a clean jar. I like to use my Mason jars. Cover and store in the refrigerator for up to 3 months. The boiled cider will thicken while in the refrigerator.
