I read this tidbit somewhere but cannot remember where I saw it. I often only need 1 or 2 slices of bacon; for a salad, to season a vegetable, to make a BLT. Gone are the days when I cooked a pound of bacon (except when I have company).
All you do is roll up 1 or 2 slices, depending on the thickness and place them on a tray to freeze. You can roll 2 slices of regular bacon together and my applewood bacon I could only roll up one. I suppose I could have used toothpicks to hold the bacon rolls together until they were frozen and then remove the toothpicks.
Once frozen place in containers or bags so you will always have just enough for that special recipe, but not too much 🙂 As Martha says “This is a good thing”.

What a brilliant idea Judi! I always end up freezing bacon too, but this is a great individual way of tucking them away for another treat.
Thanks Loretta – this is a perfect solution for me as I am frequently buying bacon, using some of it, then freezing half of it. Now, I can just thaw what I need 🙂
