This recipe comes from Italian chef, Giada De Laurentiis – she may be Italian and cooks a lot of Italian goodies but she also enjoys Thai food. Once again I was watching the Food Network channel while doing my morning workout and watched her make this tea. It just sounded and looked so good; I mean black tea with aromatic anise pods and yummy sweetened condensed milk – all three flavors came through perfectly. A delicious, cold beverage…
Thai Iced Tea
- 5 cups water
- 1/2 cup sugar
- 5 whole star anise pods
- 10 black tea bags
- 3/4 cup sweetened condensed milk
- ice (made with some of the tea – I used large silicone ice cube trays)
- mint leaves for garnish
Bring the water, sugar and star anise to a boil in a medium saucepan. Remove from the heat and add the tea bags. Allow to steep for about 1 hour. Discard the star anise and tea bags and whisk in the condensed milk. Pour some into ice cube trays and refrigerate the rest in a pitcher for at least 1 hour.
Add the tea ice cubes to glasses and pour the tea into each glass. Garnish with fresh mint leaves or lemon balm would be good too.

Thai iced tea is great, isn’t it – I really should try making it, and like your way of making some into ice cubes too.
Yes Caroline – I really liked this tea – important to have it chilled and the ice cubes made sure the tea was not diluted 🙂
