I use my slow cookers all of the time when all other appliances are being used, because I do not want to use my oven in the summer months or just to get some work done ahead of time. This is a good recipe to feed a crowd (you could double the recipe) and kick up the flavor by adding some horseradish.

Lemon Red Potatoes in the Slow Cooker
- 1-1/2 lbs. red potatoes
- onions, sliced (optional)
- 1/4 cup water
- 1/4 cup butter, melted
- 3 tbsp. parsley, minced
- 1 tbsp. freshly squeezed lemon juice
- 1 tbsp. chives, minced
- salt and pepper to taste
- prepared horseradish to taste (optional)
Cut a strip of peel around the middle of each potato. Place potatoes, water and onions in a 3-quart slow cooker. Cover and cook on high for 2-1/2 to 3 hours or until tender. Be careful not to overcook.
In a small bowl, combine the butter, parsley, lemon juice and chives; add the horseradish if desired. Pour over the potatoes and toss to coat. Season with salt and pepper.

Are those all your slow cookers? Wow, I just own one, and love it. I actually tried slow cooking the entire turkey carcass overnight in the slow cooker after Christmas. It worked a treat!! Love your lemony red potatoes. 🙂
Yes, they are Loretta. They are so handy when entertaining a few or a big crowd. I can have a lot of good food cooking at the same time, or just one dish that I do not have to fuss with. I made bread not too long ago (that I will post soon) and it turned out perfectly. I like the idea of slow cooking and saving the oven/microwave for other dishes. 🙂
I think I know what is taking up one corner of your basement, Judi… slow-cookers! 😉 You’ve got me beat… I only have three. These potatoes sound like a great side dish for a roasted leg of lamb! Mmm…maybe this weekend!
LOL! The picture did not include my 18 quart electric roaster where I can cook a nice turkey, ham, etc. I am always ready for a party 🙂

Hi Judy, no some clouds but very nice temperatures, today was 80 degrees. It’s about 72 degrees (7:20 p.m.) and a few clouds. May have showers in the evening on Wednesday-the weatherman here has no dang clue!!! Many times Central Florida or West Coast will have rain and we are clear?! Hit or miss!
My sister has two homes one in Destin area and the other in Orlando area and both places have had a lot of rain 🙂
