This is my third recipe using lavender to make lemonade and is adapted from Midwest Living. Search lemonade and you will find my other two recipes. Even though my lavender has already bloomed (I did find a few that had not bloomed) I dried a bunch of flowers earlier. One great thing about lavender buds is they keep their color and flavor if stored tightly in a dark place (your pantry or cupboard).
This was absolutely delicious and so refreshing… My lavender plants earlier in the summer…
Sparkling Lavender Lemonade
- 2 cups water
- 1 cup honey
- 2 tbsp. fresh or dried lavender buds (2 tbsp. dried was just a tad too much lavender so I will cut back a little the next time I make this)
- 1 cup fresh lemon juice
- 2 cups cold sparkling water or club soda
- ice cubes made with a slice of lemon
- slices of lemon cut in half
In a saucepan bring the 2 cups water, honey and lavender buds just to boiling; remove from heat. Let steep for about 10 minutes then drain through a sieve and discard the lavender buds. Cool to room temperature and stir in lemon juice. Cover and chill for at least 4 hours or up to 24.
Make your ice cubes. I have this neat ice cube tray that holds slices of lemon and then you pour the water around it. For clearer ice cubes boil the distilled water and pour into trays. You could also use regular ice cubes and place a piece of lemon in each compartment.
Prior to serving add the club soda. Pour the lemonade over ice cubes in tall glasses. Makes enough for 4 glasses. Garnish with lemon sprigs or use an ice cube tray as described above. A sprig of fresh lavender would look nice too!
Comment: For an “adult” drink you could add 6-8 oz. vodka to the mixture
