As I have many “drafts” on my blog that I have not published yet I decided to post some while I take a break from cooking. It will keep me involved but not the weekly pressure of “what to make next”. Anyways, the weather is starting to warm up and I will spend more time enjoying the outdoors!
This is another simple, but delicious recipe which a fellow blogger contributed to a Fiesta Friday party. Why have all of these great recipes available and not make any of them. everybodylovespretty.wordpress.com. posted “Frozen Dark Chocolate Banana Bits with Hawaiian Sea Salt” which immediately caught my eye as there are only 3 ingredients and a dessert you can always have on hand. For me I always buy too many bananas and they either get frozen for smoothies, made into banana bread and now this yummy dessert. Then I always have some kind of chocolate and of course sea salt so I can make this dessert just about any time. So, fruit and dark chocolate – healthy right? As a matter of fact since I first made this recipe I need to make more 🙂
- ripe bananas
- dark chocolate (you can use dark chocolate candy melts or when I want to use some good chocolate I will buy Ghiradelli semisweet chocolate bars)
- Maldon sea salt, or a sea salt of your choice (I later used chopped walnuts)
Melt the chocolate in a double boiler or in the microwave. Peel the bananas one at a time and slice into thick pieces. Dip banana slices in the melted chocolate using a chocolate dipping fork.
Place on a sheet of parchment paper lined baking sheet and while the chocolate is still soft sprinkle the tops with sea salt.
You can refrigerate and eat them now or freeze and later enjoy a sweet treat whenever your cravings for chocolate call you 🙂 After dipping two bananas (about 18 slices) in the melted chocolate it started to change texture and was too thick to coat. I even tried to remelt it and it did not work. I guess the carbs in the bananas had something to do with it. Regardless it did seize up on me which can happen with chocolate.

It was too simple not to try. These banana slices are a staple in my freezer now. I hope to try more recipes from fellow bloggers, especially your latest shrimp recipe after I take a break… 🙂
Very interesting about the chocolate seizing up after 18 dips! Guess you just had to dig in and eat it straight?? 😉
Of course – ha!ha! There must be a scientific reason for this but I have no idea 🙂

I know water can make chocolate seize up – let me know if you find out anything 🙂
My colleague thinks it is probably the starch in the banana that is thickening up the chocolate. 🙂

Haha! I made this after everybodylovespretty posted it, too. Instead of sea salt, I topped the bites with chopped up Macadamia nuts. So easy and what a fun treat!
Nuts are an excellent idea Ngan! I will have to do that today when I make some more. I keep a supply in my freezer as it is just enough of a sweet treat and I do not feel I am overindulging 🙂
