This is another orange flavored recipe that my husband would ask me to make, but only once in awhile and way back when – oh my heart! There are a lot of different versions for this dessert but I decided to only post this recipe that I have made.
Crème Brulee A L'Orange
- 6 large egg yolks
- 1/2 cup sugar
- 1-1/3 cups whipping cream
- 2/3 cup whole milk
- 1-1/2 tbsp. Grand Marnier or other orange liqueur
- 2-1/2 tsp. grated orange zest
Preheat oven to 325 degrees. Lightly butter six 3/4 cup custard cups. Beat egg yolks and 1/2 cup sugar in medium bowl to blend. Bring cream, milk and orange zest to simmer in medium saucepan over medium-high heat. Gradually whisk hot cream mixture into yolk mixture; stir in Grand Marnier.
Divide custard among prepared dishes. Set dishes in large baking pan. Add enough hot water to pan to come halfway up sides of dishes. Bake custards until just set in center, about 4 minutes (the time can vary). Remove and cool; cover and refrigerate overnight.
Creme Brulee Sugar:
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
Combine the sugars, then spread the mixture out on a parchment lined baking sheet. After baking the brulees, turn off the oven and place the pan inside for an hour to dry out the sugar.
Transfer sugar to a food processor and pulverize until fine. Store in an airtight container until ready to caramelize.
Preheat broiler and arrange custard cups on baking sheet. Broil until sugar browns or use a bakers torch (see below).
