I love the flavors in this salsa – it would be so much better with fresh Michigan corn, but not until August!
Feta Cheese Corn Salsa
- 1 small red onion, diced
- 1 cup fresh corn
- 1 large tomato peeled, seeded and chopped
- 1 jalapeno pepper, finely diced
- cilantro (optional)
- 1 cup feta cheese, crumbled
- 2 tbsp. white wine vinegar
Combine all of the ingredients and do not add the cheese until you are just about ready to serve it. This is really good, the feta cheese takes it to a different level.
