Parmesan Oven Fries
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp. garlic powder
- 1/4 tsp. paprika
- 1/8 tsp. cayenne
- salt to taste
- russet potatoes, cut into wedges (1-1/2 lbs.)
- 3 tbsp. olive oil
- 2 tbsp. fresh parsley (optional)
Preheat oven to 450°F with a baking sheet inside. Combine Parmesan, garlic powder, paprika, cayenne and salt in a small bowl.
Coat potatoes with 1 tbsp. oil, then add Parmesan mixture, tossing to coat. Remove baking sheet from oven and coat with remaining oil or use a cooking spray. Place wedges on the pan and roast until golden brown for 15 minutes, turn and roast 15 more minutes. The potatoes will be sticky, turn with a metal spatula. Sprinkle with parsley if desired.

They are very good…just be sure the baking sheet is hot and you oil the pan – that way they will crisp up nicely.
