Parmesan Oven Fries

A crispy cheese crust and a tender interior make these fries a good side dish to serve alongside many things such as a steak or sandwiches.  See also recipes Pulled Pork Sandwiches and Juju’s Favorite Coleslaw.

Parmesan Oven Fries

  • 1/4 cup Parmesan cheese, grated
  • 1/2 tsp. garlic powder
  • 1/4 tsp. paprika
  • 1/8 tsp. cayenne
  • salt to taste
  • russet potatoes, cut into wedges (1-1/2 lbs.)
  • 3 tbsp. olive oil
  • 2 tbsp. fresh parsley (optional)

Preheat oven to 450°F with a baking sheet inside.  Combine Parmesan, garlic powder, paprika, cayenne and salt in a small bowl.

Coat potatoes with 1 tbsp. oil, then add Parmesan mixture, tossing to coat.  Remove baking sheet from oven and coat with remaining oil or use a cooking spray.   Place wedges on the pan and roast until golden brown for  15 minutes, turn and roast 15 more minutes.  The potatoes will be sticky, turn with a metal spatula.  Sprinkle with parsley if desired.
