Broccoli has a lot of good nutrients and sometimes I like to add a sauce to it. Orange juice and zest with a hint of red pepper adds a great flavor.
Broccoli in a Spicy Orange Sauce
- 1 to 2 lbs. of broccoli florets (use stalks too if you want)
- 1/2 cup fresh orange juice
- 2 tsp. honey
- 1 tsp. Dijon mustard
- 1 tsp. orange zest, grated
- 1/2 tsp. low-sodium soy sauce
- 1 garlic clove, minced
- 1/8 tsp. red pepper
- 1-1/2 tsp. cornstarch
- 1 tbsp. water
- 1 tsp. sesame seeds, toasted
Toast sesame seeds in a small, dry non-stick skillet on low heat. Be careful as the seeds are small and can burn easily.
Combine the juice, honey, mustard, zest, soy sauce, garlic and red pepper in a small saucepan and bring to a boil. Whisk together the cornstarch and water and add to the orange juice mixture. Cook until thickened, about a minute or two.
Cook broccoli in a microwave until done. Remove and transfer to a serving bowl and toss with the sauce. Sprinkle with the sesame seeds.
This dish has 2 points per serving on the new Weight Watcher’s point system. Interesting, I just found this same recipe in my 1998 Mayo-Clinic Williams Sonoma Cookbook (3-3-12) so it must be healthy!
