Mint is one of my favorite herbs even though it can grow rampant in my garden. You just need the right spot for it where it has room to roam, or you grow it in a pot like I do. The apple jelly and mint go together well and I like to serve it over lamb chops. See Lamb Chops in a Red Wine Marinade with Mint.
Mint Sauce
- 1/4 cup brown sugar
- 4 tbsp. water
- 1/2 cup cider vinegar
- 1/2 cup apple jelly
- 1/2 cup fresh mint, chopped
Combine the sugar, water and vinegar in a small saucepan and cook over medium heat until reduced by one-third. Add the apple jelly and heat thoroughly. Just before serving, stir in the mint.

I recently (10-2013) read on the back of a bottle of malt vinegar that this is good in a mint sauce instead of the cider vinegar. I am not sure I want to try something new as the one above is so good…
