The combination of fresh fruit and romaine with a citrusy dressing always appeals to my tastebuds. This is a Weight Watcher’s salad with a serving size of 1 cup for 1 point. Just enough to go along with a main entree.
Citrus Romaine Salad With Strawberries
- 2 naval oranges (you could also add some orange zest before you peel them)
- 1 tbsp. sherry vinegar
- 1 tbsp. honey
- 1-1/2 tsp. vegetable oil
- salt and pepper to taste
- 5 cups romaine lettuce, thinly sliced
- 1 cup strawberries, sliced
- 1/2 cup red onion, sliced
Peel and section oranges over a small bowl, reserving 2 tbsp. juice. Combine reserved 2 tbsp. juice, vinegar, and next 4 ingredients in a small bowl; stir well. For a little more orange flavor add some orange zest to taste.
Combine orange sections, lettuce, strawberries and onion in a large bowl; toss gently. Pour dressing over salad; toss gently to coat.
Serves 7: Serving size is 1 cup and 1 point
