Louisiana Flounder Weight Watcher’s Style

This is a mild tasting fish and  gets its kick from the rest of the ingredients.  Very tasty and quick to get on your dinner table.

Louisiana Flounder Weight Watcher's Style

  • 1 tbsp. olive oil
  • 1/2 cup onion, diced
  • 1/2 green pepper, seeded and diced
  • 1 celery stalk, diced
  • 2 tbsp. Cajun seasoning (I use less)
  • 1 tomato, finely diced
  • 1 garlic clove, minced
  • 1 tbsp. fresh thyme, minced or 1 tsp. dried
  • salt to taste
  • 4 (4 oz.) flounder fillets

Heat 2 tsp. of the oil in a nonstick saucepan over medium-low heat.  Add the onion, pepper, celery and 1 tbsp. of the Cajun seasoning.  Cook 5-10 minutes or until the vegetables are tender to your taste.  Add the tomato, garlic, thyme and salt.  Continue to cook for another 5 minutes; keep warm.

Sprinkle the flounder with the remaining Cajun seasoning.  Heat the remaining 1 tsp. oil in a skillet over medium heat.  Add the fish and cook until just opaque in the center, about 3 minutes per side.  Transfer to a platter and spoon the sauce over the fish.

In the pictures below I used tilapia instead of flounder and added some baked fries using the Cajun seasoning.  I just love the heat and flavor of that seasoning.  No wonder as the ingredients include garlic, black, cayenne and chili pepper, oregano, sea salt, onion, paprika and red and green bell peppers.
