A favorite cookie recipe with two types of chocolate and macadamia nuts – how delicious!
White Chocolate Macadamia Nut Cookies
- 1 (12 oz.) pkg. semisweet chocolate morsels
- 1/3 cup butter
- 1 cup sugar
- 3 large eggs
- 2 cups flour
- 1 (12 oz.) pkg. white chocolate morsels (I use less)
- 1 cup macadamia nuts (I use less)
Preheat oven to 350°f degrees. Line a baking sheet with parchment paper. Combine semisweet chocolate morsels and butter. Microwave on high in 30 second intervals, stirring after each, until chocolate and butter are melted and smooth, about 2 minutes. Let cool for 5 minutes.
Beat sugar and eggs at medium high speed with an electric mixer until thick and pale. Gradually beat in cooled chocolate mixture until combined.
Mix flour and baking powder and gradually add to sugar mixture, beating until just combined. Stir in white chocolate morsels and macadamia nuts. Cover dough with plastic wrap and chill for 1 hour (do not chill any longer as the dough becomes quite hard).
Roll dough into 1-inch balls and flatten slightly. Place 2 inches apart on a baking sheet and bake for 15 minutes. Undercook for a minute or two if you want a softer cookie.
Makes about 6 dozen
